I made fried rabbit legs a while back, although delicious, they were somewhat bland.
I did only use seasoned flour for them which is probably why?
I do boil them before i fry them so i can't marinate the raw meat.
Any suggestions for something tasty?
Are you using farmed or wild rabbit? Wild rabbit is far tastier, & I don't marinate them.
A red wine with 2-3 juniper berries, a bay-leaf, 2-4 peppercorns is good for game. Crush the berries, gently simmer all dry ingredients for about 5 mins in a little of the wine, add to remainder & soak bunny overnight.
Boil in marinating liquor.
Reduce liquor for a sauce, adding a nob of butter, pour over fried bits & enjoy.
(If you make Rowan jelly, put some in the liquor when reducing)
I like to casserole my rabbit
Dijon mustard - it's a classic.
Rabbit in Mustard Sauce
1 Rabbit cut into portions
Salt
4 x 15ml spoons prepared French mustard
25g flour
Black pepper
50g butter
100g streaky bacon, rind removed and diced
1 medium onion, peeled and chopped
1 garlic clove, peeled and crushed
300ml chicken stock
150ml single cream
METHOD:-
Place the rabbit in a large bowl, cover with lightly salted water and leave overnight.
Drain, rinse under cold running water, then dry.
Spread mustard over the rabbit, cover and chill in fridge for 4 hours, then coat with the flour seasoned with the salt and pepper. Melt the butter in a flameproof casserole dish, add the rabbit and fry on all sides until browned. Add the bacon, onion and garlic, then cover and cook for 20 minutes, stirring occasionally. Stir in the stock, then cover and cook in a preheated moderate oven (160C / 325F or Gas Mark 3) for 45 minutes or until the rabbit is tender. Stir in the cream just before serving.
I just got a M95. Did not know if that is enough for this rabbit season. It does have a 29" barrel, didn't know for penetration if I needed a longer barrel? Any help would be great.
well, it should be enough to take down the rabbit, but i always recommend putting at least 3 shots center mass, just to be safe.

California Department of Fish and Game can tell you if it's Wabbit season or Duck season.
