Does anyone have a recipe for Ratatouille?
RATATOUILLE #1
1/2 c. oil
5 garlic cloves, finely chopped
1 1/2 c. onion, chopped
1 1/2 c. green or red peppers, coarsely chopped
1 1/2 c. diced eggplant, skin on
1 1/2 c. zucchini, sliced and quartered
1 tsp. fresh black pepper
1 tsp. salt
2 to 3 tbsp. chopped fresh basil
Cayenne pepper or Tabasco
1 1/2 c. chopped ripe tomatoes (may use Italian plum)
In heavy skillet, saute in oil the garlic, add onions and blend. Add chopped peppers, eggplant (does not need to be soaked or salted before) and zucchini. Blend all together well, mixing with a wooden spatula and shaking the pan. Then add black pepper, salt and basil. Add cayenne or Tabasco if desired. Cook 10 minutes over brisk heat, stirring constantly. Then add chopped tomatoes. Let the ratatouille cook down to the consistency you like.

I am making a "french feast" to show off my new kitchen, Quiche & salad, Onion soup Salade Nicoise, Chicken Provincal and Ratatouille.
What wine would anybody recommend (under $40 a bottle)
I am not limiting myself, but since I am doing a "french feast" a french wine would make sense. But again, all ideas are appreciated.

Already watched Ratatouille ?, a new 3D animation movie from walt disney. I wonder, what kind of sauce that Remmy(the mouse) used, to bake the Ratatouille in the oven ?.Any Idea how to make the sauce(If Possible, Ingredients included)?.And also What kind of sauce that he had poured on the Ratatouille, before he served it to Anton Ego?..And also what kind of Spices actually are required to make Ratatouille in real life?.....Thanx for your help

Prep Time: 30 minutes
Ingredients
- 1 large eggplant, or several smaller ones
- 2 medium zucchini
- 1 onion
- 1 pepper
- 2 tomatoes (more if small)
- 2 cloves garlic
- 2 tablespoons chopped basil, oregano or marjoram (or a mix)
- 2 tablespoons chopped parsley (optional)
- 4 tablespoons olive oil

* Cut eggplant, zucchini, pepper and onion into cubes of about 1/2 inch. Mince or press the garlic. Finely chop the tomatoes, retaining seeds and juice.
* Heat 2 tablespoons olive oil in a large skillet over medium heat. Sauté the eggplant until it begins to brown a little. Remove eggplant, add to the pan the remaining 2 tablespoons olive oil, the onions, zucchini and peppers. Cover, reduce the heat and cook for 10 minutes.
* Add garlic and tomatoes and cook 5 minutes. Add the browned eggplant and the chopped herbs and cook until all vegetables are tender - 10 to 15 minutes.
* Add salt to taste and serve hot or at room temperature.
I'm not really a huge fan of eggplant and would love to make ratatouille, but eggplant seems to be the main vegetable in it. I've seen recipes that also have zucchini, tomato, and bell pepper. Any suggestions?
I agree with your comments about eggplant. I make a ratatouille with garlic, zucchini (or yellow or a combination) and tomato. I sometimes add chopped red pepper too. Fresh basil if I have it. I would not add green peppers because they are too bitter.

LOL. I'm still waiting for a missing link to appear. Since it apparently takes millions of years for us to evolve from one species to another. You would think you'd see some in 'transition'.
